For Marco Sorbera, simplicity, tradition, and family are all concepts capturing his experience and relationship with the dishes he creates.
From his earliest memories Marco had an unexplainable interest in exploring taste and preparing authentic foods. His introduction came early in life as an astute observer of his Sicilian grandmother, Rosaria. “Nonna Sara” from Galbato cooked every meal using clay pots in her stone fireplace. The preparation and time spent always made her meals healthy and loved by the family. Rosaria's tools and methods left indelible memories that Marco still draws from. As Marco explains, “There's something about tasting food made in a clay pot over a fire. It's amazing”.

Marco's mom, Linda, also left her mark on her son. She was born and raised in Rome. “Romans are viewed differently. They're bolder and it shows in their cooking,” says Marco. Making scratch pastas and flavourful lamb, Linda's dishes always exuded the bold Roman style, which can be tasted in Marco's simple yet powerful lamb marinades.
Today, Marco draws on his past to feed the present. He believes that “food is the health and strength of a family”. Cooking for his wife, daughters, son in laws, grandchildren, family and friends, Marco always cooks exquisite dishes using as many simple home-grown ingredients.
He's intrigued by the simplicity of clean taste when combining his backyard herbs and self-made spices. Before a meal is even conceived Marco invests time in the preparation. He makes his sauces, spiced oils and peppers, and cured meats, allowing him to explore his creative side. Indeed, Marco's creativity and adventurous side are on display in any dish he puts on a table.
Marco's passions for simple yet whole foods, time-honoured traditions, and his family-first approach all have infused his love and approach to food.
